HaMachleva
At Kibbutz Givat Haim, HaMachleva is a once-shuttered dairy brought back to life by Dana Tal and Tamir Peretz – a couple trained in Italy by artisanal cheesemakers. Using fresh kibbutz milk and traditional Italian techniques, they craft handmade cheeses, each named after a woman. Their creations are available at The Little Dairy Shop on the kibbutz (open Wednesday to Friday) and at select delis across Israel. Standouts include “Nili” (Fontina-style), “Naomi” (a semi-hard blue), and “Naga” (a soft lactic cheese). Visitors are welcome to taste on-site and stroll through the nearby vegetable garden, lovingly cared for by kibbutz members.
